Seared Fish Drenched with Sauce

Ingredients:

  • Tilapia : 1 ( whole and cleaned)
  • Ginger Paste: 1 tsp
  • Garlic Paste : 1 tsp
  • Vegetable Oil :3 tbsp
  • Vinegar : 4 tbsp
  • Salt : 2 pinch
Marinating the Tilapia

For the sauce:

  • Minced Garlic: 2 tsp
  • Oyster Sauce : 2 tbsp
  • Soy Sauce : 3 tbsp
  • Fish Sauce: 2 tsp
  • Hot Sauce/Chill Sauce/Chilli Paste : 3 tbsp
  • Lemon Juice/Vinegar: 1 tsp
  • Rice Vinegar (optional): 1 tsp
  • Chopped Parsley/Coriander (optional) : 2 tsp

(Disclaimer : this is a rough estimate, feel free to adjust according to your palate. I basically taste it as I go along and add whatever I think is needed)
Mixing the Sauce

Directions:

Wash the fish with vinegar and water thoroughly to get rid of the strong pungent smell of the fish. Make deep scores on both sides using a sharp knife. Rub the fish with ginger paste, garlic paste and salt well on both sides and leave to marinate for 30 mins- 2 hours. Meanwhile, mix all the ingredients to create the sauce and set aside.

In a non stick pan, add the cooking oil and turn the heat on to medium high. Once the pan is hot, add the fish to sear, 4 minutes on each side on high heat. Set it aside once done.

Transfer the fish (and the oil in which it was cooked) in a baking pan/tray and pour the sauce over the fish. You should have enough sauce to drench the fish from all sides.

Bake the fish for 30 mins at 400′ F/200’C for 30 mins. Serve immediately!
